In a frying pan, add 2 tbsp. of olive oil and heat. Sauté sausage pieces until browned, then add minced garlic. Add the contents of the frying pan to your crockpot.
To the crockpot, also add tomato soup, crushed tomatoes, sundried tomatoes, milk, blend, chicken stock, onion powder, salt, pepper, and Italian seasonings. DO NOT ADD TORTELLINI until the last fifteen minutes before serving, as they will swell.
Turn crockpot on low and allow to cook for 4-5 hours. Stir occasionally.
Ten or fifteen minutes before serving, add fresh tortellini.
Portion into soup bowls, then add 4-5 croutons, and sprinkle with shredded Parmesan. Serve with crusty bread.
