Who doesn’t love a one pot meal that you can eat with nacho chips and topped with cheese? NO ONE! Just kidding, but for my family Taco Soup is a real crowd pleaser. It gets heavy rotation in the fall and winter and I tend to make to make it ahead on a weekend morning, so we can get on with the day and have this ready and waiting for us.
Again, another easy “pantry meal” with most of the ingredients being things you probably already stock. Pick up some ground beef when it’s on sale, and you should be ready to go.
- 1½ lbs ground beef
- 1 Cup chopped onion
- 2 cloves garlic, minced
- 1- 28 oz can diced tomatoes
- 1 -19 oz can black beans, drained and rinsed
- 1- 14 oz can tomato sauce
- 1- 12 oz can of corn
- ¾ Cup water
- 2 Tbsp chili powder
- 1½ tsp salt
- 1 tsp cumin
- Fry ground beef, chopped onion and garlic in a large pot
- Drain fat from ground beef
- Add remaining ingredients
- Bring to a boil
- Cover and simmer for 35-40 min
- Serve with nacho chips, sour cream, grated cheese, avocado, tomato, etc.
This meal only takes about 15 minutes to throw together and start simmering. If your kids aren’t crazy about soup, try making Taco Soup…they may just change their minds. 🙂
