There’s nothing like a warm pot of soup on the stove, especially during the winter months. If you’re a sweet potato fan like I am, you’re going to love this blending of sweet potato and Moroccan inspired spices that will also help warm you up. You can immediately taste a hint of cinnamon, which is delicious. I like using different beans in our meals and have been looking for a way to add lentils to the list. This sweet potato soup with lentils and it’s combination of sweet potatoes, carrots and tomatoes, make this soup a great vegetarian option, but still providing protein with the lentils.
Most of these ingredients you probably already have stocked in your pantry. Just pick up some sweet potatoes when they are on sale, and you’re good to go. If I don’t have time to make biscuits, I just serve this to my family with a toasted bagel. Any leftovers make for a delicious lunch the next day!
- 2 tbsp olive oil
- 1½ cups chopped onion
- 2 carrots, diced
- 3 cloves of garlic, minced
- 2 tsp peeled and minced fresh ginger
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cinnamon
- 6+ cups vegetable broth
- 1- 28oz can diced tomatoes
- 2 medium sweet potatoes peeled and diced into ½ in cubes
- 1- 19oz can of lentils, drained and rinsed
- salt to taste
- Heat 1 tbsp olive oil in a large pot over medium-high heat
- Add onion and carrot and saute for 4 minutes
- Add garlic and ginger and saute for 1 minute
- Add remaining 1 tbsp olive oil and cumin, coriander, turmeric, paprika and cinnamon
- Stir for 1 minute coating making sure to coat the vegetables with the spice mixture
- Stir in vegetable broth, tomatoes and sweet potatoes
- Season with salt to taste
- Bring to a light boil then reduce heat to medium-low, cover pot and allow to gently simmer
- Stir occasionally until sweet potatoes are soft, 25-30 minutes
- Add lentils during the last 5 minutes of cooking
- Add up to 1 more cup of broth if desired

Looks amazing! I will have to try it. I grew up with lentil soup as a staple, but we made it with onions, garlic, celery, carrots and either broccoli or spinach. It has a chicken broth or vegetable broth base.
