Sweet and Sour Meatballs

So, apparently some of you went right out and bought the groceries from my meal plan post and have been cooking along all week! That is great…and as one message sent to me said…”My family is counting on you….no pressure. 😉 ” We all know the exhaustion of providing meals day in and day out. Sometimes we just want someone to tell us what to make. I’m happy to help. Tonight, you’re making Sweet and Sour Meatballs.

This recipe is one I have been making for years. Meatballs, rice and peas is one of my sons favourite meals and the one he would always request if I was asking for supper ideas. It can feel a bit tedious to roll and fry little meatballs, however this one of those times you may want to consider making an extra batch. While you’re in it…you may as well just keep going. Make a double batch, then after cooked and cooled, store in a freezer bag. Feel relief wash over you with a future meal ready to go. It’s like gold in the freezer.

This is a family/teenager friendly meal. There’s plenty of sauce to pour over your rice, and makes for a comforting, hearty dish at the end of the day.

Sweet and Sour Meatballs A family favorite served with rice and peas (or your favorite vegetable) A great make ahead meal to have in the freezer.
Ingredients
Sweet and Sour Meatballs
  • 1½ lbs ground beef
  • ½ cup bread crumbs
  • ½ cup water or milk
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 cups brown sugar
  • 2 tbsp flour
  • ½ cup vinegar
  • ¼ cup water
  • 2 Tbsp soy sauce
  • 1 Tbsp ketchup
Instructions
  1. In a medium bowl mix together the beef, bread crumbs, water or milk and salt and pepper.
  2. Shape in to balls and brown in a frying pan or hot oven.
  3. Transfer to a casserole dish.
  4. In a medium size saucepan, stir together the brown sugar and flour.
  5. Add vinegar, water, soy sauce and ketchup.
  6. Whisk together and then stir over medium-high heat.
  7. Heat until boiling.
  8. Pour over meatballs.
  9. Cover.-heat in a 350F oven for 30 minutes or until hot and bubbly.

    I love this recipe and it has become a standard camping meal for us. I freeze the meatballs in the sauce and it is one of our first few meals in the backcountry. It’s always…which night should we have the meatballs. All other meals get secondary consideration. 😊
