This “recipe” is in constant rotation in my house. I hesitate to even call it a recipe…it’s really not. Introducing simple roasted potatoes.
It’s cubing up some potatoes…unpeeled…and tossing them in olive oil and oregano.
Then roasting in the oven, then sprinkling with some coarse seal salt, if you have it, or just regular salt.
Easy peasy…takes about 5-10 minutes to prep and they are ready in half an hour!
Don’t want to turn on the oven? Make these on the barbecue in one of those stir fry pans, just be sure to spray it first.
Delicious…simple…real food…ready in 30 minutes.
If I say we are having potatoes for supper…I get a “meh”. If I say we are having “Roasted Potatoes”…there is genuine excitement. It’s hard to get teenagers excited about a lot of things these days, so if they are excited about simple roasted potatoes…I’ll take it…and make them at least once a week. 😉
- 6-8 medium potatoes, cleaned
- 2 Tbsp Olive Oil
- 1 Tbsp Oregeno
- Sea Salt
- Wash and dry potatoes
- Cut into 1 inch cubes
- Toss in a medium sized bowl with Olive Oil and Oregano
- Spread out on a baking sheet lined with parchment paper (optional)
- Roast at 400F for 25 minutes, turning at the half way mark
- Sprinkle with sea salt
- Serve immediately
