Plant to Plate- Danish Cucumber Salad – Agurkesalat

Summer is in full swing and the garden produce keeps coming. It truly is the most wonderful time of the year. We’ve talked about a lot of fruits and vegetables…and recipes…as they came in season. We’ve all enjoyed rhubarbstrawberries, and of course fresh herbs. By late July, early August, it’s time for cucumbers and a nice cucumber salad.

Cucumbers can be plentiful in the garden, and at the market and makes a perfect inexpensive and delicious vegetable for snacking, sandwiches, adding to dips and of course salads. I love a plate of cucumbers sliced with just some salt and pepper on them. So many options and possibilities!

Cucumber Salad

The recipe we’re sharing today was inspired by Elspeth’s Danish roots.  This is a traditional Danish cucumber salad- Argurkesalat, and is used as side dish or even on sandwiches, burgers, etc. It is dairy free and a light, refreshing way to use up some of your cucumbers.

Plant to Plate- Danish Cucumber Salad – Agurkesalat
Recipe type: Side dish to burgers, pork, chicken or use on sandwiches
Prep time: 
Total time: 
Serves: 4-6
 
Ingredients
  • 3 thin cucumbers
  • Salt
  • 1 cup water
  • 1 cup white vinegar
  • 4 T sugar
  • salt, pepper
  • ½ thinly sliced onion, optional
  • chopped dill
Instructions
  1. Wash and slice cucumbers in paper thin slices.
  2. Sprinkle with salt and let sit for 15 minutes and drain.
  3. In a bowl mix together water, vinegar, sugar, salt and pepper and onions if adding.
  4. Pour over the cucumbers and marinate in the fridge for an hour or until the salad is chilled.
  5. Drain liquid off.
  6. Place in bowl and sprinkle with dill.
