I don’t know about you, but my kids always come home from school STARVING! I won’t mention that might be because sometimes their lunch wasn’t touched…oh my…that’s a rant for another day. They immediately start looking in the fridge or pantry, searching for anything they can devour. There’s no lingering…just grabbing…if there is a batch of banana chocolate chip muffins sitting on the counter. 🙂
I’ve been making this recipe for YEARS. It’s definitely the go-to, especially when I have bananas that need to be used up…or if I have bought a discount bag of banana’s…just for this purpose. It’s also been a favorite of many of the kids friends who have hung out here over the years. I mean it’s got chocolate chips…it’s hard to go wrong.
You fill the muffin tins about 3/4 of the way
With an apple or a fruit smoothie, this is a perfect after school snack. Just enough to hold them over. There is a 20-30 minute window before the kids will start asking “What’s for dinner???” Oh my…it never ends…but banana chocolate chip muffins helps fill the gap. 😉 Some of their other favorite things to snack on are English Muffin Mini Pizzas and M&M Cookies. Yum!
- 1¾ cups flour
- ½ cup sugar
- 1 tbsp baking powder
- ½ tsp salt
- ¾ cup chocolate chips
- 1 egg
- ¼ cup canola oil
- ¼ cup milk
- 3 medium bananas- mashed
- Measure first 5 ingredients in bowl
- Mix together and make a well in the center
- Beat egg in a small bowl until frothy
- Mix in oil, milk and mashed bananas
- Pour into dry ingredients
- Stir only until moistened
- Batter will be a little lumpy
- Fill greased muffin tins ¾ full
- Bake at 400F for 20-25 minutes
