Muffins are such a versatile food. They can be part of hearty breakfast with a hard-boiled egg and a piece of cheese. They pack well for a lunch or snack. Easy to grab on the way to game or practice. Plus, there are so many ingredients you can add to them, that you can find a variety for almost anyone.
In my house, Banana Chocolate Chip muffins have been the staple and something my kids…and all their friends…would clean up. I prefer something a little more hearty and less like cake. Peanut butter muffins fit the bill perfectly.
- 1½ cups flour
- ¼ cup sugar
- 1 Tbsp baking powder
- ½ tsp salt
- 1 cup All Bran cereal
- 1 cup milk
- 1 egg
- ½ cup smooth peanut butter
- ¼ cup canola oil
- ½ cup milk
- Combine flour, sugar, baking powder and salt into a large bowl,
- Stir together.
- Make a well in the centre.
- Combine the All Bran cereal with the first amount of milk in a medium bowl.
- Add the egg and peanut butter to the cereal.
- Mix well
- Add cooking oil, and second amount of milk
- Stir
- Pour into well and stir just enough to moisten- batter will be lumpy
- Fill greased muffin cups ¾ full
- Bake at 400F for 15-20 minutes
- Serve warm
There are different kids of All Bran Cereal, but I use All Bran Original for this recipe. Adding fibre to your diet can provide health benefits. Take note, for those with allergy concerns, it does contain wheat and barley.
The protein from the peanut butter and the fibre from the cereal, make this a filling snack. I like mine warmed with some butter and homemade jam.
Every time I make these, I have to stop myself from eating several at once. I love them! Then I promptly forget about making them…until I’m in need of *something different. 😉
