Meal Plan Monday

How did you do last week? If you have a family, it was the first full week back at school, activities, etc. A reality check if there ever was one. A meal plan will certainly help make that September survival more manageable. Even if you just plan out a few meals, write your list so you know you have all the ingredients on hand and stick that list of meals on the fridge, when you get to a challenging day, you know you already have everything you need to make a healthy meal. It’s a good thing. 😉 Welcome to meal plan Monday.

This week I shopped at the Atlantic Superstore, with a stop also at Indian Garden Farms

Here’s what we’re having:

Chicken and Black Bean Burritos

Barbecue Chicken, Corn on the Cob and Baked Potatoes

Ham and Cheese Frittata

Pork Roast Dinner in the Slow Cooker

A few notes about this week’s meals/shop..

I’ll share the chicken and black bean burritos’ recipe later this week. It’s a great make ahead meal. I bought the large package of chicken breasts that were on sale for $3.99/lb so half of the package I grilled for supper and the other half I used in the burritos’.

I generally will list the fresh produce that is on sale for each week for the recipes, but please if you can go to one of our many local farm markets, pick up some produce there as well. As I mentioned the Corn on the Cob at Indian Garden is at a season low price of $3.49/dozen and is delicious! It probably won’t be available for too much longer.

The frittata recipe has spinach and green onions listed, I just use whatever vegetables I have on hand. I will serve this with cut up carrots and any left over peppers. The big pack of peppers on sale this week is great for the frittata and also for the burritos’. Same with the marble cheddar cheese. As you begin to meal plan your mind will start to make those connections as you develop your menu.

The Pork Sirloin Roast will go in my slow cooker with some spices rubbed on it, a little broth in the bottom and onions, carrots and carrots. A basic home cooked meal that will taste and smell delicious at the end of a busy day.

No recipe required for Grilled Chicken, Baked Potatoes and Corn on the Cob. We like a little sour cream on our baked potatoes, which you could also use for the burritos’.

* A note on Superstore pricing….I’m not a fan of the multi-buy pricing, but that’s what they have right now. For example the tortilla’s were $3.49 each….or 2 for $6.00. I always do the multi-buy to get the lower price. I have a large family and now it will get used, but something to note when looking at prices.

So I spent $48.81 at the Superstore and combined with a farm market shop and some staple/garden ingredients for around another $10.00. You can have meals for this week for $58.00! Meal planning can help you eat better…save time…and of course money! It doesn’t have to be expensive to eat healthy. You just need a plan. 🙂
