It’s the first Monday in April, and we woke up to strong howling winds, snow and ice on the doorstep, and frigid temperatures….so this weeks meal plan will be all chocolate based. It’s Meal Plan Monday!
Just kidding. There is a bit of snow in the forecast for tonight…soooo…you may want to pick up an emergency stash of whatever gets you through, the wet, and sometimes cold days of April. In truth, eating well will help you feel better. This weeks meals are very easy and quick to assemble. Grab a few ingredients and you’ll be all set to feed yourself, or your family some delicious meals at the end of the day.
This weeks meal plan is from the Atlantic Superstore. Here’s what we’re having…
Tuna Burgers with baby carrots
Ham and Cheese Frittata with Ceasar Salad
Slow Cooker Pork Roast Dinner
Here’s what I bought: (all of these items are on sale this week)
D’Italiano Buns
4 cans of Clover Leaf tuna
1 dozen eggs
Romaine hearts – pkg of 3
large package of baby carrots
President Choice red mini potatoes
** I have a rain check for the Pork Roast which is on sale for $1.99/lb, which I will be picking up hopefully today or tomorrow for my slow cooker meal later this week.
What I had:
block of marble cheese
mayo
relish
croutons
bacon
caesar dressing
celery
onions
peppers
oregano
1 Tbsp. Worcestershire sauce
1 tsp. beef bouillon
1 tsp. dried basil
I will say that last week was the Easter weekend, and I tend to over buy food on holiday weekends, so I am trying to use up some of the groceries that are left in my fridge. For the Ham and Cheese Frittata, I will just use up anything left in my crisper that I can throw in….peppers, spinach, green onion, tomatoes, etc. I probably will not be using ham this time around, just cheese and veggies.
For tuna burgers I just mix up 3-4 cans of tuna with may and some relish or chopped celery. I spread it on the buns, lay a piece or two of marble cheese on top of the tuna mixture, assemble buns and wrap in tin foil. Broil for about 10-15 minutes….long enough for the buns to get warm and the cheese to melt. These are great to make and grab if you are on your way to practice, or eating in between events.
I will share my slow cooker recipe later this week. I plan to set a timer and see exactly how long it takes me to assemble this meal. I’m guessing it will be under 10 minutes….maybe under 5.
Make a plan, grab a few fresh ingredients, this week is taken care of. Don’t forget the chocolate. 😉

Oh my goodness that frittata looks so darn good! I am going to give it a try soon. I live in Southern California, I have not seen snow or ice in three years and only see it when we are out of town. I kind of miss it. 🙂

I’d take a little Southern California weather right about now! The frittata is so easy…just use whatever you have…I often put the leftovers in a toasted sandwich. 🙂
I tried the tuna burgers and we loved it! I’m going to try this next time with Our Compliments Whole Wheat and Honey English muffins, might be a close second to your recipe!
