I can feel myself and my schedule ramping up over the next few days, before the slide towards March Break. I can’t wait for a few days of no schedule and some easy living, but we still have to get there. And we still have to eat. It’s Meal Plan Monday!
This week we will be having:
Chicken Caesar Salad
Here’s what I bought:
Italian sausage -club pack- $6.71 1/2 = $3.35
Farmers Market pkg 4 Sweet Peppers- $2.77
Romaine Hearts-pkg of 3- $2.77
chicken breasts- bone-in, skin-on- $9.74
croutons $1.88
penne pasta $1.99
2-28oz can diced tomatoes $2.50
lean ground beef $8.87
taco seasoning $0.99
can of corn $1.25
2 cans of black beans $2.50
mozzarella cheese $5.99 1/2= $2.98
Total: $41.59
Here’s what I had:
caesar salad dressing
parmesan cheese
2 onions
garlic cloves
14 oz tomato sauce
chili powder
cumin
salt
This weeks meal plan comes from the Atlantic Superstore.
When I got home I threw the chicken breasts (bone in, skin on) right in the oven. After they are cooked and cooled I will slice the chicken so it’s all ready for Chicken Caesar Salad. I don’t really use a recipe, just some romaine, sliced chicken breast, croutons, shredded mozzarella cheese, and a bit of parmesan cheese. I toss it all with caesar dressing, and supper is ready.
I’ll try to share the Sausage Pepper Pasta Bake and Taco Soup recipes later in the week. These are family friendly meals that you can prep ahead to have mostly ready for the end of a busy day.
The total for the groceries I bought this week was $41.59. I’m estimating that the cost for the ingredients I had at home were around $4.00. So a total for these meals, of which I’m sure there will be some leftovers, is $45.49. If I just divide that by 3, the cost of each meal is around $15.16/meal….for 5 of us…or…$3.03/person!

Looks great and I especially like that you cooked the chicken breasts for the Caesar salad – it doesn’t take long and is so much better that using those pre cooked chicken strips I see in the stores.
It takes no time, and then it is all prepped and ready for a quick and easy supper one night this week. 🙂
