Meal Plan Monday

OK…it’s been awhile. I haven’t done a meal plan post since November. It became evident again that I SUCK at meal planning in December….which is really when I need it most. I just don’t like cooking in December…there are events and parties and cheese…and cookies….so I’m going to try to do a Freezer Meal Plan for next December…and see how that goes. ๐Ÿ™‚ But…now it’s mid-January…we’re BACK TO IT! The holidays are over…the kids sports are back in high gear…my blog work is getting busier…and we still need to eat EVERY…SINGLE…DAY. So it was time…Meal Plan Monday is BACK!

Meal Plan

Now, this one is a little different that my usual meal plans. I had a meeting Friday in the city and stopped into Costco on the way home and grabbed a few items…some of which is making up the base of this weeks plan. I’m also trying to use up some of the ingredients I have here at home…in my freezer and pantry…while planning January’s meals. So, there wasn’t a dedicated shop for this, but more of a let’s plan out the week using what I have.

So here’s what we’re having this week…

Pork Loin Roast with Mashed Potatoes and Peas

(Leftover) Pork Roast, Roasted Sweet Potatoes and Corn

Shepherd’s Pie

Corn Chowder and Cheese Biscuits

Homemade Pizza

Slow Cooker Sweet and Sour Pork, Rice and Peas

So when I was at Costco I picked up a large Seasoned Pork Loin Roast. The price was $16.51 and there was a sign that said $3.00 off. So for $13.51 I got a really large Pork Roast…ready to go in the oven…for only $6.75/meal.

I will make mashed potatoes with this (I actually made this on Sunday) and make extra so I have some ready to go for Shepherd’s Pie. I have some frozen ground beef in my freezer I am using for this. I made bacon on Sunday Morning and have a few pieces left, which will go in the Corn Chowder. Plan meals using your ingredients more than once which will help eliminate waste.

This meal plan is really based around our weekly schedule. The days there are after school games or practices…the days I have meetings, etc…everything is planned for what works best for our schedule. You will feel so much better by looking at your week…looking at what you have in your freezer and pantry…and planning your meals from there. We are all home on Thursday…with nothing on the calendar…so we are using up a Frozen Pizza Dough…and making that our pizza night.

So, no detailed price list this time as I’m really sort of winging it what I have in the fridge, freezer and pantry. It took me awhile to get back on track this month, but sticking my meal plan up on the fridge last night…felt so good!
