OK…this week’s meal plan is a little bit different…we could call it a Pork-a-Palozza. Why a Pork-a-Palozza…because I made a quick stop into Costco on Friday. It’s Meal Plan Monday!
I was in Halifax for a fantastic meeting with East Coast Mom Bloggers and had just enough time to zip into Costco before I hit the highway to head home. I was really just planning to buy some family staples to have on the weekend. Chocolate milk, oat cakes, strawberries and bananas and maybe a big bag of party mix….it is the weekend after all. 😉
Then I glanced at the meats and in a side bunker they had large Pork Tenderloin on sale. I grabbed one for $15.23. This was too good to pass up and I immediately knew I could make 4-5 meals from this one purchase. I will cut this into a roast, cubed for Sweet and Sour Pork in my slow cooker, carved up for a pork chop dinner and then also slice some for a stir fry. If you get 5 meals out of this, that breaks down to $3.05/meal. Amazing!
So I wasn’t thinking this quick stop into Costco would turn into a meal plan post….I clearly could have planned it a little better…but once I got home I knew how this would help shape this weeks menu. Once you get in the habit of meal planning, you will be able to quickly form a menu even with just a few ingredients as a base.

OK, will I make us some sort of Pork Dinner every night this week? Most likely not, but I will have some of the pork in the freezer ready to go for another week. This type of planning when something is on sale, can dramatically reduce your food budget. Every week there are different meats and produce on sale and that is where you should be basing your meal plan.
