We’re a hockey family. My son plays in the Nova Scotia Junior Hockey league, and we are currently in the first round of playoffs. Playoffs have us traveling in the middle of the week for a game, or playing a home game at 8:00pm on a Sunday night, like we did last night. These weeks leave us exhausted and sometimes drained…which is what we felt after leading 4-1 going into the 3rd…we ended up losing in overtime and now we are traveling again mid-week. Ugh. Welcome to the beginning of the week and Meal Plan Monday.
As any parent of an athlete knows, those pre-game meals are important. I generally aim for pasta or something hearty that will hold him over and fuel him during the game. Of course, we need nourishment too…all that cheering and clapping…is exhausting! 😉 Having a meal plan during these times is crucial.

Beef Stir Fry with Rice

Some notes about this weeks plan:
* The lasagna makes a large 9×13 pan and is very rich and filling. This will do us for two nights.
* The Stir Fry with bottled sauce makes a quick and easy meal for a weeknight. Great way to get your teenagers in the kitchen and helping out!
* I’ll use the small bag of potatoes..and eggs for the potato salad. Mixed with a little mayo and chopped onions, and of course salt, pepper and a little paprika.
With what I spent combined with I had I’m estimating this weeks Meal Plan Monday to cost me $76.58. Lots of hearty meals this week, perfect for the athlete, and his supportive family. You can eat well on a budget, you just need a plan.
