It’s a holiday today here in Nova Scotia, Heritage Day, and this is only the second year we have had this day recognized. While many provinces celebrate Family Day, we now observe Heritage Day on the third Monday of February. I have to say I think I can get used to a planned long weekend in the middle of winter. It’s a great time to come out of hibernation, reconnect with friends, do some outdoor activities, cheer on a sports team…the possibilities are endless! But guess what….we still need to eat. 😉 Welcome to Meal Plan Monday!
All our stores are closed today, which makes it a good time to plan your meals from what you have in your freezer and pantry. I’m fairly certain most of us at any given time could eat for days from what we have at home. Be creative, see what’s in your fridge that needs to be cleaned out. Start with produce and make sure to use up anything fresh before it goes bad. You’ll save yourself some money, time and still feel prepared.

Pasta with Easiest Ever Spaghetti Sauce
A lot of these recipes can be adapted to use what you have. By making a plan and using up what you have, you too can be on your way to taking the stress and worry out of the “What’s for supper?” question. What can you make this week using what you already have in your cupboards, fridge and freezer?

I’m doing a bit of a pantry challenge this week with a focus on international foods. I’ll be using up produce in things like a vegetarian curry. I also have some things that have been in the pantry for ages that I am using this week such as rice noodles for Pad Thai.
