Meal Plan Monday

Super Bowl Sunday is over. By all accounts it was a historical game. I am not much of a football watcher, but certainly appreciate the thrill of a come back win. I spent last night watching one of my favourites, “Crazy, Stupid Love” with my daughter. I love that movie. So funny, and realistic when it comes to married life, and of course…Ryan Gosling. As a Canadian I appreciate his many talents and attributes. 😉 Now let’s get to why we are here; Meal Plan Monday.

Assuming you didn’t take today off, it’s back to the grind. Calling for a little snow, ice and rain at some point this week. A pretty typical February forecast here in Atlantic Canada. Unless you still have chicken wings left, you may need a meal plan for tonight and this week. Here you go…

This week’s meal plan is from The Atlantic Superstore.

4 large Carrots- Vegetable Beef and Rice Soup
4 stalks of Celery- Vegetable Beef and Rice Soup

Beef Stock- Vegetable Beef and Rice Soup
Lemon Juice- Vegetable Beef and Rice Soup
3 tbsp Soy Sauce- Honey Soy Baked Chicken
5 tbsp Honey- Honey Soy Baked Chicken
1/2 tsp ground Ginger- Honey Soy Baked Chicken

A couple of notes about this week’s meal plan:

* Lean ground beef is on sale for $2.99, but I bought medium ground beef by mistake. They had a large sign right next to where I picked it up that said “Lean”, but you have to be careful when buying meat that is on sale. I paid more for medium ground beef than the lean is on sale for. Ugh.

* The Vegetable Beef and Rice Soup makes a large pot. We will most likely have that for 2 nights, the 2nd maybe with grilled cheese sandwiches.

*I’ll do a future post on the Baked Nacho Dip, but I just fry up 1 1/2 lbs of ground beef, sprinkle taco seasoning over it and mix it in. Spread in a 9×13 pan. Pour a large jar of salsa on top. Layer with chopped tomatoes and green peppers. Pour half of the large sour cream on top. Then top with 2 cups of grated cheddar cheese. Bake at 350 for about 20-30 minutes. Crowd pleaser. 🙂

Five meals for about $63.00. Real food on a budget is possible, you just need a plan.
