It’s summertime! And that makes me think of lemonade, BBQ’s, and the cool tangy taste of the classic key lime pie. This is such an easy pie to make and it sure tastes refreshing, Key Lime Pie – Taste of Summer
With only a few simple ingredients, like a ready-made crust, you can have this refreshing dessert ready to go in no time.
The “lime” in Key Lime Pie
It might seem obvious, but be sure to pick up some fresh limes. This time of year many farm markets will have limes in stock. Look for limes that are soft to the touch and a light green colour.
- One graham crust - 7 or 8 inch
- 2 cans sweetened condensed milk
- 2 limes juiced
- Additional bought lime juice to equal ½ cup of juice
- 4 egg yolks, beaten
- Note: If you get a bigger crust (9 or 10 inch) you can increase amounts to 3 cans SC milk, 5 egg yolks, and ¾ cup lime juice.
- Bake your graham crust for 10 minutes on 350. Remove and cool while you are preparing the pie filling.
- Mix sweetened condensed milk, egg yolks in a bowl.
- Juice the limes into a measuring cup and add additional lime juice to equal ½ cup. Pour into egg/condensed milk mixture. Mix well with beaters or by hand.
- Pour into graham crust and bake 10-12 minutes at 350.
- Remove and cool. Chill later.
- Garnish with whipping cream and fresh lime to serve.
