When I think about Holiday food and treats, I get excited about all the recipes I see on Pinterest or in magazines. I imagine how I am going to experiment with all types of new things this year. The truth is, I just end up making the same things year after year. But, I’m OK with that. At least I’m still making “something”, like this Holiday Banana Loaf 😉
This bread is made a lot leading up to the Holidays. It’s a great gift to pass out to teachers, (they don’t need another mug) bring to a workplace lunch, or have in the freezer for any last-minute Christmas visitors. A slice of this with a cup of tea, and you’ll forget…momentarily…about your huge December to-do list.
- 2 eggs
- 1 cup sugar
- ½ cup melted butter
- 3 medium mashed ripe bananas
- ½ tsp almond extract
- 1½ cups flour
- ½ cup medium coconut
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup chopped walnuts
- ½ cup chopped maraschino cherries
- Beat eggs until light and frothy
- Add sugar and melted butter and mix well
- Stir in mashed bananas and almond flavoring
- Stir remaining ingredients in another bowl until well mixed
- Pour over batter
- Stir just to combine
- Pour into a greased 9x5 loaf pan
- Bake at 350 F for 1 hr or until toothpick inserted in center comes out clean
- Let stand for 10 minutes
- Remove from pan
- Cool and wrap
* A few notes about this recipe…this is from the Company’s Coming Muffins and More book. You can substitute margarine for butter…but don’t. 😉 The nuts are optional. The almond extract gives it a really nice flavour. Enjoy!

So next time you’re at the grocery store and you see those bags of over ripe bananas on the clearance rack…buy one! Make a couple of these loaves…if you have all the ingredients and you’re making one…you may as well just keep going and make 2 at the same time. Having something ahead in the freezer will make you feel good. Trust me. Little things make me happy. Having one of these tucked away, makes me very happy.
