Ham and Cheese Frittata is in constant rotation in my house. In fact, I don’t even consider it a recipe anymore. It couldn’t be easier and a great way to use up whatever ingredients you have in the fridge. I make this a lot on Sunday mornings, but it works perfectly for a weeknight meal, or meatless Monday if you want to leave the ham out.
Eggs are such a great source of protein, throw in some ham and cheese and veggies and this is a quick weeknight option to feel good about. We often toast some bread or bagels and throw this ham and cheese frittata in a sandwich. If you are using this weeks meal plan, make a caesar salad on the side. So many options!

- 6-8 eggs
- 1 tsp oregano
- 1 cup shredded cheese
- ½ cup diced ham steak
- 1 tomato diced
- ½ cup diced peppers
- handful of baby spinach
- 1 green onion thinly sliced
- Preheat oven to 350
- Spray a 9-inch pie plate
- Whisk eggs together with oregano and a some black pepper
- Stir in cheese, ham and veggies
- Bake in center of the the oven until the edges are browned and the center is firm- 25-30 min
- Let stand for 5 minutes before cutting

Ham and Cheese Frittata is a perfect go-to recipe that gives you the ability to make a quick meal and use up whatever veggies, cheese, etc that you may have left in your fridge. I like to make mine in a simple deep dish ceramic pie plate. It looks pretty if you want to put it on the table and serve it for a brunch/lunch, etc. Who doesn’t like to make our meals look pretty? ๐
