Certain seasons are busier than others. When you have a family, they all can certainly feel busy, but definitely there are times when the calendar is full and lots of things are happening. We are in one of those seasons. Sports, year-end school events, getting my garden in, planning for summer, our seasonal AirBnB is reopening, my work here, etc, etc. There are a lot of moving parts. The one thing I know I need to get things under control…I need a meal plan. I have this weeks meal plan written out and the groceries bought and I feel SO much better…and calmer…already. Oh meal planning…why do I ever doubt you? 😉

We are shifting our meals as well. Burgers, salad, etc, will start making an appearance more and more on my meal plans. I can not tell you the relief I felt when I planned my meals, ordered my groceries online (totally life changing!) and picked them up on Friday. Life will be busy for a while, but having some real food and meals to feed my family at the end of the day, is so good for all of us.

I sent the recipe for oven baked fajitas to a friend on Friday after receiving your email. She had taken chicken out to thaw for supper but didn’t have a plan for it. She decided to make fajitas. She messaged me later and said “They were perfect! A hit!”🙂 I asked how spicey they were and she said she said she liked her Mexican food hot so could have had more spice but that her husband and three kids ages 3,5 and 7 said they were just great!
