There’s nothing like a nice bowl of warm soup at the end of the day. Pair it with some fresh homemade bread or rolls…and you’re all set. Soup or chowder is comfort food at its finest and here in Lunenburg County, corn chowder is certainly a favourite. How many of you are making it with fresh corn when it is in season?
Peter’s Corn
At Wile’s Lake Farm Market, people start asking for “Peter’s Corn” long before it is ready. It is a seasonal favourite and if you’ve ever had it, you know it is delicious! Who is Peter? Is he real? LOL…he sure is!
Corn Chowder
Corn chowder is a terrific way to use up some fresh corn…and their cobs! This recipe uses fresh corn and their cobs to make a stock. A different and delicious way to enjoy corn.
- 4 Cobs of fresh sweet corn, husked and cleaned
- Stock
- 1 bayleaf
- 5 fresh thyme stems
- 1 t whole black peppercorns
- 1 clove garlic
- Chowder
- 1 carrot, diced
- 1 large onion, diced
- 2 stalk celery, diced
- 3 Tablespoons butter
- 2 Tablespoons flour
- 4 large potatoes, peeled and diced
- 2 cups milk
- ¼ cup cream
- salt and pepper to taste
- Cut corn off of the cobs and set aside
- Break the cobs in half, place them in a soup pot and cover with cold water
- Add bay leaf, thyme, peppercorns and garlic
- Bring to the boil and simmer for 45 minutes
- Strain, reserving the liquid
- While the stock is cooking dice all the vegetables
- In a heavy bottomed soup pot melt the butter and sauté the carrot, celery and onion gently on medium heat
- Add the flour then whisk in 6 cups of the corn stock until it starts to simmer
- Add the potatoes, milk and salt and pepper
- Simmer until the vegetables are tender
- Add the cream and reserved corn kernels
- Simmer for 5 minutes and adjust seasoning
- Garnish ideas: bacon bits, green onions or chives
You’ll want to be sure to add seasoning to taste after you finish cooking your corn chowder.
