Apple Cranberry Chutney- Plant to Plate

- 6 Gravenstein or Cortland apples, peeled, cored and diced
- 1 cup onion, chopped
- ¾ cup cranberries, chopped
- ¼ tsp. ginger, dried
- 1 cup orange juice
- ¾ cup apple cider vinegar
- ¾ cup brown sugar
- 1 tsp mustard seeds
- ¼ tsp hot red pepper flakes
- 1 ½ tsp salt
- ¾ cup raisins, preferably golden (the color)
- Combine the apples, onion, cranberry, ginger, orange juice, vinegar, brown sugar, mustard seeds, pepper flakes, and salt.
- Bring the mixture to a boil over medium heat, stirring from time to time.
- Reduce the heat and continue cooking slowly for about 1 hour until most of the liquid disappears Add the raisins.
- Allow to cool and store in the refrigerator.
