Sweet Potato Casserole- Fall Favourite

Ingredients
  • Casserole:
  • 3 cups mashed sweet potatoes (3 large potatoes cubed, cooked and mashed)
  • ½ tsp. Vanilla
  • ½ cup butter melted
  • 1 cup sugar
  • 2 eggs, beaten
  • ½ cup milk
  • Topping:
  • 1 cup brown sugar
  • ½ cup flour
  • ½ cup butter
  • 1 cup chopped pecans
Instructions
  1. In a large mixing bowl, beat together the casserole ingredients.
  2. Pour into a lightly greased casserole dish. Set aside.
  3. Combine topping ingredients, using a knife to cut butter into the brown sugar and flour, then using a pastry blender until it is crumbly.
  4. Mix in the nuts.
  5. Sprinkle topping mixture over casserole.
  6. At this point, dish can be covered and refrigerated.
  7. Bake uncovered in a preheated 350 degree (F) oven for 45-50 minutes, until browned and bubbly.
