A spring favourite made with buttery graham cracker base, cherries, coconut, and fluffy pink icing, these Cherry Delight bars will have you dreaming of spring and all things Easter.
Cherry Delight Bars
Cherry Delight Bars start with a graham cracker base
A middle layer of coconut, maraschino cherries and sweetened condensed milk

Ingredients
- For the base:
- 2 cups graham cracker crumbs
- ½ cup melted butter
- ½ cup brown sugar
- 1 tbsp. Flour
- For Middle Layer:
- 2 cups unsweetened coconut
- 1 can sweetened condensed milk
- 20 maraschino cherries, chopped
- For Icing:
- ½ cup butter softened
- ¾ cups icing sugar
- 2 tbsp. Heavy or whipping cream
- 2 tbsp. Boiling water
- 1 tsp. Vanilla extract
- 2 tbsp cherry juice
- Red food colouring (optional)
Instructions
- Preheat oven to 300.
- Spray an 8x12 baking pan with nonstick spray or line with parchment paper.
- In a bowl, combine base ingredients — crumbs, melted butter, brown sugar and flour.
- Press into prepared baking pan and bake for 15 minutes.
- Remove from oven and set aside.
- Increase oven temperature to 350.
- In a separate bowl, combine the coconut and sweetened condensed milk.
- Mix well.
- Add chopped cherries and stir just enough to incorporate cherries.
- Spread this mixture over the base and bake for 20 minutes or until edges begin to get golden. Remove from oven and cool completely.
- For icing, use a mixer to whip soft butter and icing sugar until fluffy and light.
- Add cream and beat another two minutes.
- Add boiling water and beat another two minutes.
- Add vanilla, cherry juice, and food colouring.
- Beat again.
- Spread over cooled squares.
- Serve. ( Squares freeze well too)
Let cool completely, add icing and cut into squares. Who’s hungry? 😉
