Summer time and the living is easy! Our meals should follow that same mantra, which is why keeping the oven off and firing up the barbecue makes so much sense. Plus, everything seems to taste a little bit better when it is cooked outside on a grill. It can even turn a simple potato into a delicious, tasty side…mmmmm. Barbecued Foil-Wrapped Potatoes, easy as 1,2,3.
In no time at all you can make foil wrapped potatoes and throw them on your barbecue. I find they are great to cook alongside barbecue chicken as they take about the same time to cook. Cut up a cucumber or throw together a green salad or mix up corn and bean salad, and a delicious summer supper is ready. Bonus….no pots or pans to clean!
- 4-5 medium size Potatoes
- 2-3 Onions, sliced
- Butter
- Salt
- Wash and dry potatoes
- Make 4-6 slits in potato, cutting almost to the bottom
- Place onion slices in between potato slits
- Dot with butter
- Wrap in aluminum foil tightly
- Place foil wrapped potatoes on barbecue grill and cook at 400F for approximately 1 hr ( may be less/more depending on size of potato)
- Open foil, sprinkle with salt
- Serve in foil packets
You can serve these right on the plate wrapped in foil, it’s summer, food should be fun! Potatoes, onions, butter, salt and pepper…the simplest of ingredients taste delicious on their own.
