What’s better with a summer barbecue than a side of tangy, crunchy cole slaw? This 4-ingredient Coleslaw recipe is quick and easy to make at home and complements barbecued steak, chicken, ribs or other meats so well. It just feels like summer.
For those of you doing a keto diet, you can make it keto friendly by substituting a couple packets of Splenda (or other sweetener) in place of sugar. I’ve recently started using the broccoli slaw (also sold in bags) in place of the cole slaw mix, and combining it with the same dressing for a more “stick-to-your-ribs” version.
- 1 bag of colourful cole slaw (or you can grate up your cabbages yourself, or use broccoli slaw)
- 1 cup of mayo (real mayo — not Miracle Whip)
- 2 tbsp. white vinegar
- 2 tsp. sugar
- Salt and pepper to taste
- Cream together the mayo, vinegar, and sugar- adjust the vinegar and sugar amounts according to your taste, by tasting the dressing
- Add the cabbage mixture to the dressing and toss thoroughly
- Add pinch of salt and pepper.
- Refrigerate until you are ready to serve and allow the dressing to saturate the slaw
- Stir well before serving
4-ingredient coleslaw makes a perfect side to summer meals.
